Creamy Coconut Curry Chickpeas

This is a weekly meal in our household; Its so rich and hearty! We made this using No Chicken Base Bouillon, and it took the dish to the next level.
Shopping List
3 cups of chickpeas or 2 cans
2 tbsp. olive oil
1 medium onion
5 garlic cloves
2 cups vegetable stock
1 tbsp. no chicken base bouillon
2 sprigs thyme
1 habanero pepper/ scotch bonnet pepper
3 small potatoes
1 can coconut milk
1 tbsp. curry powder/ curry paste
1 tsp sea salt or salt to taste
1/4 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/4 tsp red pepper flakes
